I make wine like a scientist of bygone times. I adopted the words of Francis Bacon’s Organon: “Nature to be commanded, must be obeyed”. I believe that wine begins in the mind. Afterwards it is vineyard business, with total respect for the environment and the vine’s growth and production equilibrium. After that it’s a wine cellar affair, when the right techniques enhance what Nature put into the grape. All this to ensure “the seed gets the best”, a life guarantee for the grape. A truly great wine isn’t simply produced: it’s designed. A noteworthy wine isn’t for tasting, it’s a desperate love affair. An incredible wine will drive you to drink to the point of emotional, but not alcoholic, self-destruction, creating what I call a fatal attraction. Nonetheless, drinking wine doesn’t mean suffering, it means sublime physical joy. That’s why I’ve gathered a team of internationally-renowned oenologists to work on my organic viticulture plan. The great tradition of rural civilization can fuse with modernity. An excellent wine can be designed without corrupting the authentic essence of the grape with a chemical overdose, to make a wine that speaks to human thought and soul.
